This is a real crowd-pleaser and one of our personal favourites for an easy weekend meal. We’ve taken a classic WA lamb shoulder and butterflied it so it’s ready to hit the heat. The marinade is a savoury mix of mustard and herbs that creates a great crust and keeps the meat juicy underneath.
It’s perfect if you’re looking for a roast that’s a bit different from the usual. Throw it on the BBQ, roast it in the oven, or even use the air fryer either way, you’re getting tender, flavourful lamb that’s ready in half the time of a traditional roast.
